Simple Vegetable Rava Upma
Ingredients:
1. 1 cup Semolina (Rava/Sooji)
2. 2 cups Mixed Vegetables (carrots, peas, beans, etc.), finely chopped
3. 1 Onion, finely chopped
4. 1-2 Green Chilies, chopped
5. 1 tsp Mustard Seeds
6. 1 tsp Urad Dal (Black Gram)
7. A few Curry Leaves
8. 1-2 tbsp Cooking Oil
9. Salt to taste
10.3 cups Water
11.Fresh Coriander Leaves for garnish (optional)
Instructions:

Roast Semolina:

Heat a pan on medium heat and dry roast the semolina until it turns golden brown. Set aside.

Sautéing Vegetables:

In the same pan, heat oil. Add mustard seeds; let them splutter.

Add urad dal and sauté until it turns golden brown.

Add chopped onions, green chilies, and curry leaves. Sauté until onions are translucent.

Add mixed vegetables and cook for a few minutes until they are slightly tender.

Cooking Rava:

Pour water into the pan and bring it to a boil.

Reduce the heat to low, add salt, and slowly add the roasted semolina, stirring continuously to avoid lumps.

Simmering:

Cover the pan and let it simmer on low heat for 5-7 minutes or until the rava absorbs the water and the upma reaches a desired consistency.

Garnish with fresh coriander leaves if desired.
