Kambu Aval
Ingredients:
1 cup Kambu Aval (Pearl Millet Flakes)
1/2 cup mixed vegetables (carrots, peas, and beans)
1 small onion, finely chopped
2 green chilies, chopped
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal (black gram) A handful of curry leaves
1/4 cup peanuts
2 tablespoons oil Salt to taste
1/2 teaspoon turmeric powder Fresh coriander for garnish Lemon wedges for serving
Preparation: Rinse Kambu Aval under cold water and set aside. In a pan, heat oil and add mustard seeds. Once they splutter, add urad dal, peanuts, and curry leaves. Add chopped onions and green chilies. Sauté until onions are golden brown. Toss in mixed vegetables, turmeric powder, and salt. Cook until vegetables are tender yet crisp. Lower the heat, add Kambu Aval, and mix well. Cook for 2-3 minutes, allowing flavors to meld. Garnish with fresh coriander and remove from heat.
