Ingredients:

1 cup Aval (Poha/Flattened Rice)

2 tbsp Oil

1 tsp Mustard Seeds

1/2 tsp Cumin Seeds

1 Onion, finely chopped

1 Green Chili, finely chopped

1/2 cup Carrots, finely chopped

1/2 cup Green Peas

1/2 cup Capsicum, finely chopped

1/4 cup Cashews, chopped

Few Curry Leaves

1/2 tsp Turmeric Powder

Salt to taste

Fresh Coriander leaves for garnish

Rinse aval under cold water to soften it. Set aside.

Heat oil in a pan, add mustard seeds, cumin seeds, and let them splutter.
