Millet Dosa

Ingredients:

  • 1 cup Millet Flour (any millet of your choice)

  • 1/4 cup Rice Flour

  • 1/4 cup Urad Dal (Black gram lentils), soaked for 4 hours

  • 1/2 cup Curd (Yogurt)

  • 1 Onion, finely chopped

  • 1 Green Chili, finely chopped

  • 1/2 inch Ginger, grated

  • Handful of Coriander Leaves, chopped

  • Salt, to taste

  • Water, as needed

  • Oil, for cooking

Instructions:

  • Prepare Batter:

    • Grind soaked urad dal to a smooth paste. In a bowl, mix millet flour, rice flour, urad dal paste, and curd.

    • Add water gradually to form a thick, lump-free batter. Let it ferment for 6-8 hours or overnight.

  • Seasoning:

    • Add chopped onion, green chili, grated ginger, chopped coriander leaves, and salt to the fermented batter. Mix well.

  • Make Dosas:

    • Heat a non-stick pan or griddle. Pour a ladle of batter and spread it in a circular motion to make a thin dosa.

    • Drizzle oil around the edges. Cook until the edges lift and the bottom turns golden brown.

  • Flip and Cook:

    • Flip the dosa gently using a spatula. Cook the other side until it's golden brown and crisp.

  • Serve:

    • Remove from the pan and repeat the process with the remaining batter.

    • Serve the millet dosas hot with coconut chutney or any chutney of your choice.

These nutritious millet dosas are not only delicious but also a healthy alternative to traditional dosas. Enjoy your wholesome meal!
