Millet Dosa
Ingredients:

1 cup Millet Flour (any millet of your choice)

1/4 cup Rice Flour

1/4 cup Urad Dal (Black gram lentils), soaked for 4 hours

1/2 cup Curd (Yogurt)

1 Onion, finely chopped

1 Green Chili, finely chopped
-
1/2 inch Ginger, grated
-
Handful of Coriander Leaves, chopped

Salt, to taste

Water, as needed

Oil, for cooking
Instructions:

Prepare Batter:

Grind soaked urad dal to a smooth paste. In a bowl, mix millet flour, rice flour, urad dal paste, and curd.

Add water gradually to form a thick, lump-free batter. Let it ferment for 6-8 hours or overnight.

Seasoning:

Add chopped onion, green chili, grated ginger, chopped coriander leaves, and salt to the fermented batter. Mix well.

Make Dosas:

Heat a non-stick pan or griddle. Pour a ladle of batter and spread it in a circular motion to make a thin dosa.

Drizzle oil around the edges. Cook until the edges lift and the bottom turns golden brown.

Flip and Cook:

Flip the dosa gently using a spatula. Cook the other side until it's golden brown and crisp.

Serve:

Remove from the pan and repeat the process with the remaining batter.

Serve the millet dosas hot with coconut chutney or any chutney of your choice.
