Millet Rava

Soak 1 cup of rava in water for at least 3 hours. Heat 2-3 tbsp oil in a skillet and add 1 tsp mustard seeds to splutter. Add 1 tsp cumin seeds, a few curry leaves, 1 chopped onion, and 2-3 slit green chilies. Sauté until onions are translucent. Add 1/2 cup chopped vegetables (carrot, beans, peas) and cook for 2-3 minutes with a pinch of salt. Drain the rava and add it to the skillet along with 3 cups of water. Stir well on medium heat until water is absorbed and the mixture thickens. Garnish with coriander leaves and serve hot.
