Enhance its flavor by sautéing with vegetables, spices, and herbs for a nutritious upma or pulao. Alternatively, blend it into dosa or idli batter for a wholesome twist. This gluten-free grain is rich in fiber, making it an excellent choice for those seeking a healthier alternative in various culinary creations.

Instructions:

  1. Roast the Rava: Dry roast the Kuthiravali Rava in a pan until it turns light golden. Set aside.
  2. Prepare the Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Add urad dal, chana dal, and fry until golden brown.
  3. Sauté Vegetables: Add chopped onions, green chilies, grated ginger, and curry leaves. Sauté until onions turn translucent.
  4. Add Vegetables: Add chopped carrots and green peas. Cook for a couple of minutes.
  5. Add Water and Cook: Pour in 3 cups of water and bring it to a boil. Add salt to taste.
  6. Cook the Rava: Slowly add the roasted Kuthiravali Rava, stirring continuously to avoid lumps. Cook on medium heat until the rava absorbs all the water and becomes soft.
  7. Serve: Garnish with chopped cilantro and serve hot.
