Instructions:

  1. Heat oil in a pan or kadhai over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and sauté for a few seconds until they start to crackle.
  2. Add chopped ginger, green chili (if using), and curry leaves. Sauté for a minute until they release their aroma.
  3. Add chopped onions and sauté until they turn translucent.
  4. Now, add chopped tomatoes and cook until they become soft and mushy.
  5. Pour 2 cups of water into the pan and bring it to a boil.
  6. Once the water boils, reduce the heat to low and gradually add the ragi rava while stirring continuously to prevent lumps from forming.
  7. Add salt to taste and mix well. Cover and let it cook on low heat for about 5-7 minutes or until the ragi rava is cooked through and absorbs all the water.
  8. If using grated coconut, add it now and mix well.
  9. Turn off the heat and let the upma sit for a couple of minutes.
  10. Garnish with fresh coriander leaves and serve hot with chutney or sambar.
