Instructions:

  1. Preparing the Varagu:

    • Wash the Varagu thoroughly in water.
    • In a pot, add 2 cups of water and bring it to a boil.
    • Add the washed Varagu to the boiling water, reduce the heat to low, cover, and cook until the millet is tender and the water is absorbed (about 15-20 minutes). Fluff with a fork and set aside.
  2. Preparing the Aval:

    • Wash the Aval in water and drain immediately. Do not soak for too long as it will become mushy. Set aside.
  3. Tempering:

    • Heat oil in a pan over medium heat.
    • Add mustard seeds and let them splutter.
    • Add urad dal and chana dal, and fry until they turn golden brown.
    • Add finely chopped green chilies and curry leaves, and sauté for a few seconds.
    • Add chopped onions and sauté until they turn translucent.
    • If using, add the chopped carrots and green peas, and sauté until they are cooked through.
  4. Combining the Ingredients:

    • Add turmeric powder and salt to the pan, and mix well.
    • Add the cooked Varagu and washed Aval to the pan, and mix gently to combine all the ingredients.
    • Cook for a few minutes until everything is heated through.
    • Add lemon juice and mix well.
  5. Finishing Touches:

    • If using, add grated coconut and mix well.
    • Garnish with chopped fresh coriander leaves.

  • 1 medium-sized onion, finely chopped
  • 1 medium-sized carrot, finely chopped (optional)
  • 1/4 cup green peas (optional)
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons grated coconut (optional)
  • Fresh coriander leaves, chopped, for garnish
