Kambu (Pearl Millet) Flour Roti

Instructions:

  3. Once the dough is formed, cover it with a damp cloth and let it rest for about 15-20 minutes.
  4. After resting, divide the dough into small lemon-sized balls.
  5. Take one ball of dough and flatten it between your palms to form a small disc.
  6. Using a rolling pin, roll out the dough into a thin circle, dusting with a little flour if needed to prevent sticking.
  7. Heat a tawa or flat griddle over medium heat.
  8. Place the rolled-out roti onto the hot tawa and cook for about a minute on one side until small bubbles start to appear.
  9. Flip the roti and cook for another minute on the other side.
  10. Brush with ghee or oil and cook for an additional 30 seconds to a minute, until both sides are golden brown and cooked through.
  11. Remove from the tawa and repeat the process with the remaining dough balls.
  12. Serve hot with your favorite curry, dal, or chutney.
