
A soft, wholesome puttu made using Mil8 Health Mix Powder and grated coconut. This recipe brings the familiar comfort of traditional puttu with the added benefit of using a millet-based health mix in everyday breakfast.

Ingredient | Quantity |
Mil8 Health Mix Powder | 1 cup |
Water | ½ to ¾ cup, as required |
Salt | As required |
Grated coconut | ½ cup, or as needed |
① Take Mil8 Health Mix Powder in a wide bowl.
② Add salt to water and mix well.
③ Sprinkle the salted water little by little over the health mix powder.
④ Mix gently with your fingers until the powder becomes moist and crumbly.
⑤ The mixture should not become a dough. It should remain loose, but when pressed in your palm, it should hold shape lightly.
⑥ Rest the mixture for 5 minutes.
⑦ If there are lumps, pulse the mixture once or twice in a mixer grinder. Do not grind continuously.
⑧ Fill the puttu maker by adding grated coconut first, then the health mix mixture, then coconut again in between layers.
⑨ Steam for 5 to 8 minutes, or until steam comes out well from the top of the puttu maker.
⑩ Switch off the flame and carefully push out the puttu.
⑪ Serve hot.
Mil8 Health Mix Puttu can be served with:
① Banana
② Kadala curry
③ Green gram curry
④ Coconut milk
⑤ Jaggery and grated coconut
⑥ Vegetable kurma
⑦ Egg curry, if preferred by the family
① Sprinkle water slowly
Do not pour water directly. This is the most important step for soft puttu.
② Do not make it into dough
Puttu mixture should be moist and crumbly, not sticky.
③ Rest before steaming
Resting for 5 minutes helps the powder absorb moisture evenly.
④ Use fresh grated coconut
This improves softness, aroma, and taste.
⑤ Pulse only if needed
Mixer grinding is only to remove lumps. Over-grinding can make the mixture dense.
⑥ For softer puttu
After mixing, cover and rest for 10 minutes before steaming.
Correct texture: moist, crumbly, soft after steaming.
Too dry: puttu will break and feel powdery.
Too wet: puttu will become heavy and sticky.
If too dry, sprinkle a little more water.
If too wet, add a little more Mil8 Health Mix Powder and mix again.
Best served fresh and hot.
The prepared dry-moist mixture can be kept covered for a few hours before steaming. Steamed puttu is best consumed immediately.
