gather the following ingredients:

1 cup Cholam (sorghum) flour

1/2 cup rice flour

1/4 cup urad dal (black gram dal) flour

Water Salt to taste Oil for cooking

Preparation: In a mixing bowl, combine 1 cup of cholam flour & pinch of salt. Mix the dry ingredients thoroughly for an even blend. Gradually add water while stirring to achieve a smooth batter with a consistency similar to regular dosa batter. Allow the batter to rest for at least 4-6 hours or overnight for fermentation. This not only enhances the flavor but also makes the dosas more digestible. Before making dosas, add salt to taste and adjust the batter & Its consistency with water if needed. Heat a non-stick pan or griddle and pour a ladleful of batter onto it, spreading it in a circular motion to form a thin layer. Drizzle a little oil along the edges for a crisp texture. Once the edges turn golden brown, flip the dosa and cook the other side until it is thoroughly cooked.
