Kambu Rava, also known as pearl millet semolina, is a nutritious and gluten-free grain alternative. Produced by grinding pearl millet into a coarse texture, it boasts a rustic, nutty flavor. Rich in fiber, vitamins, and minerals, Kambu Rava is a wholesome choice for a variety of dishes. Its versatility allows it to be used in traditional South Indian recipes like upma or as a healthier substitute in modern recipes like porridge or baked goods, providing a delicious and nutritious twist to your meals.

Kambu Rava Upma:

  1. Heat oil in a pan or kadhai over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.

  2. Add chopped onions, green chilies, ginger, and curry leaves. Saute until onions turn translucent.

  3. Add chopped tomatoes and cook until they turn soft and mushy.

  4. If using chopped vegetables, add them now and sauté for a couple of minutes until they are slightly tender.

  5. Meanwhile, rinse the Kambu Rava under running water and drain excess water.

  6. Add the rinsed Kambu Rava to the pan and roast it for 3-4 minutes until it turns aromatic.

  7. Now, pour 2 cups of water into the pan. Add salt according to taste. Mix well.

  8. Cover the pan with a lid and let the Kambu Rava cook on low heat for about 5-7 minutes or until all the water is absorbed and the Kambu Rava is cooked through. Stir occasionally to prevent sticking.

  9. Once the Kambu Rava is cooked, fluff it up with a fork.

  10. Garnish with freshly chopped coriander leaves if desired.
