Multi Millet Puttu is a nutritious South Indian dish made from a blend of various millets, including ragi, bajra, and jowar, along with grated coconut. It is steamed to perfection and typically served with coconut milk or banana for a wholesome breakfast or snack. The dish is gluten-free, rich in fiber, and offers a diverse range of nutrients.

History: Multi Millet Puttu originated in the southern regions of India, where millets have been staple grains for centuries. The dish reflects the traditional wisdom of combining different millets to enhance nutritional value. Known by various English names like "Mixed Millet Steamed Cake," it has gained popularity for its health benefits and delightful taste.

Multi Millet Puttu:

  1. Prepare the Puttu Flour Mixture:

    • In a large mixing bowl, combine all the millet flours together. Mix well to ensure even distribution.
  2. Moisten the Flour Mixture:

    • Gradually sprinkle water onto the mixed flour while continuously mixing with your fingers. Be careful not to add too much water; the texture should be crumbly, not wet.
  3. Layering in the Puttu Maker:

    • Take your puttu maker (a cylindrical vessel with perforated lids), and add a layer of grated coconut at the bottom.
    • Follow it with a layer of the millet flour mixture. Repeat the process, alternating between coconut and millet flour until the puttu maker is filled.
  4. Steam the Puttu:

    • Place the filled puttu maker over a pot or steamer with boiling water.
    • Steam for about 8-10 minutes or until the puttu is cooked and fluffy. You'll notice steam coming out from the top holes of the puttu maker when it's done.
  5. Serve Hot:

    • Once cooked, gently push the puttu out of the cylinder using the stick provided with the puttu maker or a skewer.
    • Serve hot with your favorite accompaniments such as kadala curry (black chickpea curry), banana, or sugar.

  • 1 cup ragi (finger millet) flour
  • 1 cup kodo millet flour
  • 1 cup foxtail millet flour
  • 1 cup pearl millet flour
  • 1 cup little millet flour
  • 1 cup grated coconut
  • Salt to taste
